I got this question a ton and, truthfully, I think she enjoyed it more than we did. Here were her daily activities:

Napping
Riding in the front with the window down
Getting the zoomies at the beach
Napping
Going for walks in big trees
Sleeping on the bed
Chasing crows
Napping

Some small amount of research will tell you that dogs are not allowed on trails at most National Parks, nor are they allowed on trails in any of the California State Parks we visited. However, they are allowed in all of the Oregon State Parks and there are two roads they are allowed to walk along on in California. Plus they're two of the coolest possible roads:

Cal-Barrel Road in Prairie Creek Redwood State Park. Note if you search this on Google Maps, it'll take you to the wrong road on the East side of 101. Hopefully this saves you from the sadness we experienced accidentally wandering into an active logging area that used to have Redwoods.
Walker Road in Jedidiah Smith Redwoods State Park.

We did admittedly hike some quick trails and ate out twice where dogs weren't allowed. During those times we left Mae in the van where she happily napped on the queen-sized bed until we came back. At which point she continued napping on the queen-sized bed. And just because I don't condone leaving dogs in hot (or very cold) cars, this van had the ability to turn on the heat or A/C without leaving the engine running.
